Hi Fnds,
Just wanted to share this receipe to you all.
Beetroot thovaiyal:

Cut the beet roots into cubes (after peeling the skin).
Pressure cook them and let it cool.
Grind the beets, coconut, green chillies, asofoetida and salt.
In a pan add oil, saute with mustard seeds and fry cut onions until it is medium brown.
Then add the grinded ingredients and fry until the raw smell is gone.
This beetroot chutney goes well with plain rice.
